Safety and quality of additive-free meat foods: register for the workshop

The technical-scientific conference dedicated to the safety of meat foods "E number free" will take place on October 25th from 2:30 pm to 4:30 pm at the MEAT-TECH event hall, pav 15.

"Meat foods safety and quality without additives", this is the title of the event organized by In_Formare, that is part of the panel of conferences and insights dedicated to operators in the sector who will visit the fair.  

At the basis of the concept of " Meat foods safety and quality without additives "  there are costumers choices, increasingly attentive to the healthiness of products and oriented towards the purchase of food without additives, especially in the meat segment. During the event, the speakers will outline an overview of the formulation, safety, shelf life and packaging of these products, focusing on:

• Engineering of meat-based foods without additives

• Technologies and packaging

• Substitute treatments to guarantee stability

• Shelf life and predictive microbiology

• Food certification "without" according to UNI / PdR 57: 2019

The speakers at the conference, moderated by the scientific director Dr. Amina Ciampella, will be:
